Blueberry Muffins

I hope y'all had a fantastic Thanksgiving last week! My family all gathered at my parents house and had a great time. Normally with my family, you can't get us all together without some type of argument or 'loud discussion' taking place. lol! Fortunately everyone was on their best behavior and there were no arguments. Hallelujah!

Today, I decided to share one of my most favorite breakfasts lately. Blueberry muffins. Now, I don't know how y'all make your muffins, but I generally don't bake muffins other than like banana nut muffins occasionally. A few weeks ago, my hubby and I were grocery shopping at the new-ish Winco Foods down the road. I don't know if y'all are familiar with Winco but they have a really large bulk food section with spices, rice/grains, noodles, crackers, candies, and mixes. We weren't in a hurry so we decided to look through all of the different items there. When I saw the blueberry muffin mix I immediately grabbed a bag so I could try the mix.

Hubby was actually the first one to make muffins with this mix a couple of days later and holy yum. Best. Muffins. Ever.

We make sure to keep the mix in the house now so I can whip these babies up a couple of times a week. We have them for breakfasts, snacks or dessert!

The directions are super simple, only the mix and water! That is something even the most in-experienced cooks can't mess up! lol

Do you have an easy muffin recipe that you'd like to share with me? Pretty please?!

  3. Chocolate chip pumpkin muffins. Mix one box devil's food cake with can of pumpkin puree (NOT pie mix) and handful of chocolate chips. Cook according to directions on box. I sprinkle turbinado sugar on top 'cause I like the top to be crunchy.

This makes about 18 muffins. Batter will be very thick and they may not be pretty but they are delish. Warning - the batter tastes like shit. Can freeze.
