So seriously though, I love Frank's Red Hot and I will use it on just about anything. Scrambled eggs? You betcha! Dip your quesadilla in it, heck yes! Slather your chicken with FRH? Yes please!
I don't know about you, but when I'm hungry and don't know what I'm in the mood for I will hop on Pinterest for a little inspiration. The other night I knew I wanted pizza but really wasn't in the mood for the old standby of pepperoni. I hopped on Pinterest and found this
Uh, YUM! So I looked in the fridge and saw that I had chicken breast, FRH, ranch and mozzarella. We make our pizza crust at home so I knew I had what I needed to make the dough. After deciding this was exactly what I was looking for I thought, what do you always get when you get wings at a restaurant? You get blue cheese! Why in the world was that not already included in this recipe?! I ran to the store and grabbed some blue cheese and then spent the next few hours watching the clock waiting until it was late enough to make dinner ;)
Hubby is fantastic and always makes the pizza dough for me. See, we have a little arrangement. He makes the dough and forms it and puts it on the pizza pans and then I build the pizzas from there. This works for me. I don't get covered in flour and he gets to flex his muscles with the rolling pin. That sounds like a win-win to me ifyouknowwhatimsayin' ;)
Anyhoo, so after he got the pizzas ready for me to build I did one pepperoni for Hannah and the other buffalo chicken for us. Can I just say how amazingly delicious this pizza turned out? OMG. I'm salivating just thinking about it now. lol
So, here is what I did - I mainly used that recipe from Pinterest as a guide but didn't follow exact measurements and of course added my own twist by adding the blue cheese.
2 boneless skinless chicken breasts
1 cup Frank's Red Hot Buffalo Sauce
1/2 cup ranch dressing (the creamier the better)
1 1/2 cups mozzarella cheese
1/2 cup blue cheese crumbles
1. pre-cook chicken breast in a little extra virgin olive oil. when it's rested a few minutes thinly slice it and then give it a rough chop to make more bite size pieces.
2. place chopped chicken in a bowl with your cup of FRH and coat evenly. put it to the side.
3. spread the ranch dressing all over your dough, this will be your base.
4. spoon your chicken evenly over your pizza and cover with any extra FRH (optional)
5. sprinkle mozzarella over whole pizza
6. sprinkle blue cheese over whole pizza
7. bake at 500° for about 13-15 minutes
This, my friends is what you will see when you take it out of the oven. This is by far my favorite pizza I've had in a really long time! I hope you make this and love it as much as I do!
